Amaranth ... has twice as much iron as wheat and is higher in protein and fiber. Quinoa ... has less fiber but more protein and iron than wheat.

For men, the higher iron content is not necessarily a good thing. Higher protein and fiber, OTOH, are good.

For me (as the person primarily responsible for buying food for the boys) this is excellent news. The more people are eating alternative grains, the more available they will be. Seriously, there's nothing like having kids with multiple food allergies to make you realize exactly how limited the Standard American Diet is. Take out gluten (primarily in wheat, but also in barley, rye, spelt, kamut, triticale, etc.), corn, and dairy, and watch your options shrink dramatically. Take out potatoes, tomatoes, apples, and grapes, and well...you're not left with much. We are discovering all sorts of interesting and exotic grains and vegetables that we'd never heard of before. And a lot of these things are actually much better for you than the SAD. I just wish they'd legalize hemp production in the U.S. Hemp seed makes wonderful (and highly nutritious) flour, and I have a wonderful recipe for banana hemp muffins, but I haven't been able to get hemp flour locally for a while now. I suppose I ought to try looking online. I'll have to do that once we get moved.
