One word: patients.
Got any friends (who'll be at the event) who can be coerced into play-acting? Who can be brought in for live demonstrations, say, towards the end of the class? You could call in a "patient," go all Socratic method on the students -- what is afflicting this patient? how would you cure it? -- and then either demonstrate the cure, or send them off with the "medicine."
It would be great if you could bring in four patients, and have them each demonstrate aspects of the humoural imbalance of each of the humours (i.e., a melancholic lump, a choleric madman, etc.) -- greater still if you had access to some sort of cosmetic or prosthetic that would help with the illusion of the humoural imbalance. ;)
