Slowly, ah, slowly...

But the feast for Conviviencia (Labor Day weekend in Peach Bottom PA) is coming together.

starters:
- Lombardy sops (cheese and bread casserole)
- something sharp-tasting?

First course
Fried Millet polenta
Armored Capon?
Sauce(s) of some kind?
Greens dish?
Moorish Eggplant (eggplant, meet de Nola)
Lentil or chickpea dish (vaguely favoring chickpeas)?

Casserole of meat, made with pork
Mirrauste of apples?
Rice in the oven
Fish with bitter orange juice?

Carrot-cheese pie

Tonight I'm going to try this again... We cooked this (warm) for the last convivencia:

A Muzawwara (Vegetarian Dish) Beneficial for Tertian Fevers and Acute Fevers. Take boiled peeled lentils and wash in hot water several times; put in the pot and add water without covering them; cook and then throw in pieces of gourd, or the stems [ribs] of Swiss chard, or of lettuce and its tender sprigs, or the flesh of cucumber or melon, and vinegar, coriander seed, a little cumin, Chinese cinnamon, saffron and two ûqiyas of fresh oil; balance with a little salt and cook. Taste, and if its flavor is pleasingly balanced between sweet and sour, [good;] and if not, reinforce until it is equalized, according to taste, and leave it to lose its heat until it is cold and then serve.


I'm going to go heavy on the seasoning, and the chard, we shall see if it needs gourds or cucumber...

I'm thinking
- boil one pound of lentils until they are soft
- rinse them repeatedly
- put them in a pot with a little water
- cook them some more
- add
chopped ribs of swiss chard
2-3 tbsp of olive oil
a spoonful or more of cumin, ground
several spoonsful ground coriander
less cinnamon
1 pinch saffron
vinegar to taste (remember to measure!)
salt to taste
- cook until thoroughly encorporated
- cool

I want it to be more flavored this time.

(besides we need a lentil pottage for our lunches this week.)
