Well, if it's a good soup.
Bunny's basic black bean soup take 3:
3 cans black beans, rinsed
3 carrots, peeled and chopped
2 onions, peeled and chopped
5 cloves fresh garlic
1 handful frozen celery greens and twigs*
2-3 tsp minced dried garlic
1 tsp cumin
dash salt
Pinch dried thyme
2 pork neckbones **
add water to cover about 2x the depth.
Simmer for an hour and a half or so.
Since the pork neckbones we used were not smoked, we added some leftovers, 6 - 3" segments of kielbasa sliced up (added in the last 45 minutes of cooking)
mmmmmm...
The minced dried garlic makes it extra good but the whole cloves melted to yummmess.
*Yes, we eat a lot of celery due to sporadic attempts to South Beach. So, we take the tops, greens, and the insides that are too skinny for sticks, wash 'em and chop 'em up small, and stick them in a baggie in the freezer, to be reincarnated as soup greens at need.
** I buy smoked and non-smoked pork neckbones on sale, package them in snack-size baggies (1-2 bones each) and throw them in soup.
