Teaching at Pennsic

I'm trying to decide what to teach at Pennsic.

My mustards class?
Scented oils?
Medieval Gardens?
Sallets and Green pottages?
Women & Medicine in Period?
A cooking class?
Some Slavic-related stuff?

Brid challenged me to teach a class that I had never taught anywhere else and I never thought of teaching before... that's a challenge. I've thought about teaching so many things.
