If you choose food preservation, I'd be appreciative of the opportunity to observe how you put the class together. It is something I know some about, and am interested inseeing the process of class-creation.
However, I would be very happy to take a class in seasonal foods and meal planning. We are very much accustomed to refridgeration and transportation, it would be neat to know more about.
